The Demi-Chef de Rang primary responsibility is to look after an assigned station in the restaurants, In-Residence Dining, during special events or beach BBQs, ensuring Residents and Guests are consistently provided with courteous, engaging, prompt and efficient service.  This role mainly involves serving food, clearing the table, setting tables and doing proper mise-en-place for service stations.  The Demi-Chef de Rang must be able to demonstrate a pleasant, courteous and outgoing personality while interacting with Residents and Guests to contribute towards creating an outstanding dining experience.

Responsibilities

Restaurant Operations

  • Responsible for delivering and serving food in an assigned restaurant
  • Execute table services with perfection as per Standard Operation Procedures for all restaurants at all times while observing The World Standards of Excellence
  • Ensure mise-en-place of stations are ready before and after service
  • Check tables, chairs, floors, background music, waiter stations mise-en-place, menus and POS terminals in the restaurants prior to the service
  • Check that the reservations software “Avenista” and “World Central” preference tablets are synched and ready to use for service
  • Prepare revenue reports at the end of each shift and submit it to the Night Auditor
  • Participate in Chef’s daily special briefings and take necessary notes to explain the dishes to Residents and Guests accurately and professionally
  • Remain fully knowledgeable of all restaurants menus and preparations and their brief history
  • Complete side duties assigned by Management
  • Take full responsibility of checking the restaurants thoroughly for maintenance tasks and make an AVO as required

Resident and Guest Service

  • Exceed Resident and Guest expectations in every aspect of personalized service in accordance with Leading Quality Assurance (LQA) standards and participate in regular trainings
  • Communicate all Resident and Guest special requests and dietary requirements with the team
  • Ensure positive and constructive comments from Residents and Guests are communicated to the Maitre’ D

General

  • Assist Management with training and coaching of New Hires
  • Actively support the goals and objectives for the department and adhere to all new policies and company initiatives as assigned
  • Maintain accurate Time & Attendance Records for each time period worked
  • Ensure all areas are maintained in accordance with Public Health, Safety Management System (SMS) and Safety & Environmental regulations; adhering to Company Policies and procedures as appropriate to the position
  • Execute safety duties as per the Emergency Plan and Station Bill
  • Assist with Ship tours, Zodiac landings, Marina days, Expeditions, and other activities when required

Skills & Abilities

  • Able to read, write and speak fluently in English
  • Diploma in Hotel Management is preferred
  • Minimum of 2 years’ relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort
  • One additional language (German, French, Italian, Spanish) preferred
  • Good planning and organizational skills
  • Outgoing personality and good sense of humor to converse with Residents and Guests

Physical Conditions

  • Ability to work seven (7) days a week for an extended period, including day or night, weekends and holidays.
  • While performing the essential functions of this job, all Crew are required to stand, walk long distances on the Ship and may include the repetitive motion of bending, climbing, going up and down the stairs and lifting up to 23 kilograms.
  • All Team members must be physically able to participate in emergency life-saving procedures and drills. All vessel positions require full use and range of arms and legs as well as full visual, verbal and hearing abilities to receive and give instructions in the event of an emergency including the lowering of lifeboats.
  • Work within different temperature changes - indoors to outdoors.
  • Ability to pass STCW safety course.
  • Able to live harmoniously in close quarters.
